Your Weekend Cocktail - Pomegranate Mojitos

Up until last week, I had 4 huge mint plants sitting on the ground, beneath the windows in my living room.  The cats did not even pee on them, which, is pretty incredible and most likely should be viewed as a testament to the greatness of mint.  Did you know that it's used as a natural insect repellant, room freshener and, in Ancient Rome, it was worn by students wishing to sharpen their smarts?  Well, the plants were on loan and I already gave them back- but not before snipping some mint for myself.  I don't know too many things that mint is an unwelcome addition to BUT it really steps up to the plate in mojitos.  I'm not even a rum fan but mojitos are a different story and if you don't like's highly possible that you also don't like finding money in your pockets, compliments from strangers, watching terrible people walk into screen doors, green lights, news footage of Hollywood Blvd costumed characters getting arrested, and not having to wait in lines.  Sometimes I just don't understand you.

Pomegranate Mojitos
20 mint leaves
1 lime, cut into 8 wedges
2 tablespoons simple syrup
1/2 cup white rum
1/4 cup and 2 tablespoons pomegranate juice
2 cups ice
club soda

Muddle mint leaves and lime wedges in a sturdy container. Add simple syrup and continue to muddle. Add rum and pomegranate juice and stir. Fill two glasses with ice and divide unstrained mojito mixture between both glasses. Top with club soda and give it a stir. Garnish with lime. Makes 2 mojitos.
